[1]Regional flavor trends — especially those from Latin American and the United States — will be the thing in 2013, according to a recent study.
The study, released by flavor consulting firm Bell Flavors & Fragrances, says that American, Mexican and Latin American regions will top the trends for next year, Food Business News reports[2].
Mexican food will dominate the savory flavor group. With flavors ranging from Aji Amarillo to sofrito, the regional tastes of Mexico and the rest of Latin America are already showing up on restaurant plates. The study predicts a greater percentage of American homes will be cooking with these flavors, too.
Flavor trends for beverages also will be influenced by Latin America. Look for sweet drinks that blend in latino spices such as cardamon and jalapeno to become popular. Also keep an eye — and nose — peeled for horchatas, butterscotch and whipped cream in 2013′s drinks.
Regarding sweet foods, restaurants will be looking to provide some escape for their customers. Look for a return to basics such as peanut butter and hot chocolate to provide a bit of nostalgia at the end of a busy day.
