The restaurant chain will begin testing consumer reaction to “Sofritas,” a vegetarian product made from tofu at seven San Francisco locations this month. This is the second time the chain has experimented with a vegetarian dish in recent years, the Denver Business Journal notes.
In 2010, CMG tried out a “Garden Blend” filling for tacos and burritos, made from soy and vegetable proteins. But it fell short of expectations.
CMG says Sofritas contain “shredded tofu braised with chipotle chilis, roasted poblanos and a blend of aromatic spices.” Customers can order Sofritas in burritos, tacos, burrito bowls and salads.
Last month, CMG said it would launch a catering menu for groups of between 20 and 200 people, starting at restaurants in Colorado before rolling it out to all 1,350 locations nationwide.
Shares of Chipotle Mexican Grill rose more than 1% in Friday midday trading.
