The city of Milwaukee, Wis. is turning to cheese to fight against icy roads this winter.
The city is talking about putting cheese brine, which is basically water and salt, on roads to clear them of ice this winter. Cedar Valley Cheese in Belgium, Wis. circulates 30,000 gallons of brine in channels. Cheese floats in these channels and absorb salt from the water and release fat into it. Cedar Valley Cheese uses machines to recycle dirty brine for reuse, but it also disposes of the brine at the Wastewater Treatment Plant. The Milwaukee Department of Public Works says that using cheese brine and rock salt together could be better for the environment and save the city money. The city would have to make sure that its offer to take the brine from Cedar Valley Cheese would be beneficial to the company. Cedar Valley Cheese currently disposes of the cheese at very little cost. Polk County started using cheese brine on its roads during winter and claims that it saved the county $40,000 in the first year, reports Fox 6.
Milwaukee has used beet juice and a molasses-type product in the past to remove ice from roads.
