Chipotle is introducing its organic tofu Sofritas across its 1,600 restaurants in response to rising demand for vegetarian products. CMG CEO Steve Ellis says noted that Chipotle has sold an increasing amount of vegetarian burritos in recent years, Restaurant News notes.
The Sofritas rollout will happen gradually. Chipotle restaurants in New York and Boston will get Sofritas on Monday. Sofritas is already available in California and Mid-Atlantic CMG restaurants. The company did not indicate when CMG restaurants in other regions would get Sofritas.
Sofritas combines organic tofu with chiles, tomatoes and spices. It will be offered as an option for tacos, burritos, salads and burrito bowles in CMG restaurants.
CMG began testing Sofritas in San Francisco last year.
CMG stock climbed more than 1% in Friday morning trading. CMG stock has risen more than 75% over the past year.
