Wilbur Scoville used humans to test the heat of peppers and The Art of Compounding, a book written by him, was one of the first to mention milk as a way to combat the heat of peppers. Doodler Olivia Huynh has been considering making him the subject of a Google Doodle since last year.

The Google Doodle featuring Wilbur Scoville includes a small game. This game shows Scoville testing the heat of different peppers. To combat the heat, he eats ice cream. It’s at this point that the player has to defeat the peppers by hitting them with ice cream. This is done by clicking the screen at the right time with the mouse.
